Assamese Kol Pitha (Banana Pancake)

A sweet and fragrant banana pancake wrapped in banana leaves, showcasing the simplicity and warmth of Assamese cuisine.

- 2 cups Rice flour
- 3 Bananas ripe
- Banana leaves as needed for pancakes
- Sugar optional, to taste
Dry roast the rice flour for 2-3 minutes on medium flame.
Mash the bananas until smooth. Add sugar to add sweetness, if desired.
Mix the mashed bananas and rice flour into a thick consistency batter.
Heat the pan and gently warm the banana leaves.
Spread some batter on one half of the banana leaf. Gently fold the leaf to cover the batter. Ensure the batter does not leak.
Place this on the pan and let it cook on both sides until the leaf changes its color to brownish-yellow.
Remove from the stove, unwrap the leaf, and serve with tea.
