The Boro community is one of the largest Scheduled Tribe (ST) in North-East India and they are the aboriginal people of Assam. The Bodo tribe of Assam is the largest ethnolinguistic group in the state. Like the diversity in their culture, the Bodo cuisine is also diverse and contains foods rich in protein and other nutrients. Rice is the staple food of the people of the Boro community. The Boro people are pork lovers. Along with it, the Bodo cuisine also includes silkworms, snails, and dry fish, local chicken. And to add some kick to the food, Boro people love to drink Jwo (rice beer), made from fermented rice.
They live amid nature and their living system is based on natural resources. They produce foods from nature by cultivating crops, hunting, fishing, farming, etc. Their main food is rice along with rice they eat meat Oma Bedor (Pork), Napham, Onla wngkhri, Narji wngkhri and they drink Jwo or Jumai (Rice Beer). Onla is one of the most popular ethnic dish of the Boro community. The local chicken is cooked with rice powder. The rice powder forms a thick texture, making it super delicious.

Ingredients
- 2 cups Rice powder
- 1 cup Kalkhar
- 5 gm Turmeric powder
- Salt To taste
- 5 gm Chilli paste
- 5 gm Garlic
- 10 gm Ginger
- 1 cup Onion
- 250 gm Local chicken
- 10 ml Mustard oil
- 5 gm Cumin seeds
Instructions
- To make onla, first heat the kadai and add mustard oil. Let it warm up.10 ml Mustard oil
- Add onion to the heated oil after cumin seeds have been added and have started to spark.5 gm Cumin seeds, 1 cup Onion
- When the onion begins to turn golden brown, add the chicken, stir everything together, and cook it.250 gm Local chicken
- After the chicken has been thoroughly combined with all of the ingredients add turmeric powder, ginger, garlic, chili paste, and salt.5 gm Turmeric powder, 5 gm Chilli paste, 5 gm Garlic, 10 gm Ginger, Salt
- The chicken is allowed to cook for 15 minutes after adding water.
- After adding a little more water in between, the chicken is left to cook for a while.
- Then add khar to the chicken curry and let it cook for a while, rice powder is gradually added to the curry.1 cup Kalkhar, 2 cups Rice powder
- Once the onla is ready add chopped coriander leaves to the curry.
- Serve this delicious onla with steamed rice.
