Assamese Kol Pitha (Banana Pancake)

- Pan for roasting flour
- Bowl for mixing

Ingredients
- 2 cups Rice flour
- 3 Bananas ripe
- Banana leaves as needed for pancakes
- Sugar optional, to taste
Instructions
- Dry roast the rice flour for 2-3 minutes on medium flame.
- Mash the bananas until smooth. Add sugar to add sweetness, if desired.
- Mix the mashed bananas and rice flour into a thick consistency batter.
- Heat the pan and gently warm the banana leaves.
- Spread some batter on one half of the banana leaf. Gently fold the leaf to cover the batter. Ensure the batter does not leak.
- Place this on the pan and let it cook on both sides until the leaf changes its color to brownish-yellow.
- Remove from the stove, unwrap the leaf, and serve with tea.
